5 Crowns for Nawaloka Hospital’s Culinary Department yet again

Nawaloka Hospital has achieved the no ordinary feat of being awarded the rare 5 Crowns for Food Hygiene rating for its kitchen, headed by renowned Chef Marios Alan Gerreyn. Furthermore, this is not the first time that Nawaloka’s kitchen department has won this coveted award but the second successive year, demonstrating their uncompromising perseverance towards the task of creating the best possible environment for wholesome, hygienic food to be prepared.
Nawaloka Hospitals which is the first hospital in Sri Lanka to win 5 Crowns for Food Hygiene in their very first attempt in 2012, has its kitchens producing over 300 to 400 meals three times a day. In addition the popular Café 77 combines delicious meals and an array of short eats with some healthy options which include an assortment of breads, juices and health teas. Passionate about standards and quality of service, Chef Alan, who has over 30 years of industry experience of which 10 are at the Nawaloka Hospital, in collaboration with his 40 dedicated kitchen staff have not let the baton down and made sure that they have won this award for the second straight year in a row.
The rating process is quite a stringent one that rewards restaurants and kitchens for their efforts towards being the best.
The kitchens are rated on cleanliness and hygiene, a total audit of the kitchens, medical reports on it and reviews of the storage of frozen foods. Furthermore points are awarded for keeping accurate records of processes that occur within the kitchen through a comprehensive process of documentation.
“My staff and I are proud to see rewards for our ceaseless efforts towards the standards we maintain in the kitchen we run,” said Chef Alan. “It is an honour to have won all 5 crowns for the second time around and it definitely gives us motivation to carry onwards. I cannot emphasise enough our gratitude to the management, especially our Chairman Jayantha Dharmadasa and Directress Givanthi Dharmadasa for giving us the support to achieve so.” In recognition of his contribution to the culinary field Chef Alan was conferred with the title of Deshabandu Dr. Marios Alan Gerreyn by the All Island Nanaguna awarding foundation.
