A lavish culinary tradition of rich fare is brought to life with ‘3 Nights of Moghul Marvels’ at the Alhambra Restaurant, Ramada Colombo. For a never-before experience Chef Ziyad Khan together with his team have pieced together a most exquisite dinner buffet menu with an abundant variety of Moghul cuisine for just three days in March – 11 Friday, 12 Saturday and 13 Sunday.
Such an array of dishes could only be enjoyed over a truly long and leisurely dinner … from starters and soups, to a unique choice of pickles and chutneys; from Indian breads and biryanis fused with the perfect blend of spices to action stations where hot-hot favourites are served; from a range of the freshest seafood to a carvery and of course a sinfully sweet dessert counter, guests are sure to make many visits back to the buffet counters here! What’s more, there even a few Indian-fusion dishes included to add excitement and variety.
For great beginnings sip up on Jal Jheera, a spiced shooter or Murgh ka shorba a flavourful chicken soup. The main course leaves you spoilt for choice. For some must-try recommendations the Gosht Kali Mirch of boneless chunks of mutton pairs off perfectly with butter naan, whilst the fresh flavours of the Lobster and prawn biryani is ideal to enjoy the milder vegetarian curries on offer.
The range of kebabs deserve a special mention – the succulent mutton Bhuna gosht ke kebab, the chicken Murgh begum bahar kebab and the vegetarian Hara bhara kebab of green pea and cashew nut are simply delicious. For the lover of lamb, the carving station serves up Tandoori sikandari raan, a real royal treat! With all this guests would need to keep some space for dessert too … milky dumplings of gulab jamun, sticky-sweet sago payasam and many more await.
Chef Ziyad Khan’s carefully crafted recipes stay true to those that were first created in the imperial kitchens of the great Moghul dynasty. The regional cuisine spans many centuries and is known for its deeply aromatic and robust flavours. Preparation is an art – meats are gently marinated to bring out the finest flavours whilst vegetables are diced to perfection to ensure just the right mingling of spices. Some dishes are almost sensually slow cooked whilst others involve vigourous stirring to blend elements together. It is this perfected craft that will make guests truly satisfied with every dish they savour on this dinner buffet.
