The idea of a rooftop BBQ came to Botanik when the team realised this cuisine is not readily available in Colombo and its rooftop terrace was the perfect location for a Sunset BBQ.
With their love of smoking and charring cooking techniues, Chef Nizran and the Botanik team were quick to come up with a menu of delicious grilled items like a Beef Brisket with Coffee Rub, Grilled Lamb Cutlet with Fermented Soya sauce and even a charred Corn Togarashi with Feta Crumble.
The BBQ made its debut during the Groove Society DJ Collaboration on 29 September, where Happy Hour deals and the grilling started early in the day, and the music and festivities continued into the night. Items like the sharing platter were a huge hit—where groups of two or three could share a loaded platter of smoked chicken wings, sausages, and a classic potato salad.
It was then that the Rooftop BBQ became a staple event for Botanik regulars. October’s Rooftop BBQ menu included Negombo Lagoon Prawn and Grilled Lamb Chops with Red Curry and a special performance by five-piece local band Brown Sugar.
November was no different, as acoustic band The Drift performed their jazzy renditions of pop songs for the Colombo Audience while Chef Nizran and his team served up yet another delicious localized BBQ menu. The menu continues to incorporate local ingredients and cooking techniques each month, and December hopes to continue the trend.
December will be launching the Saturday Rooftop BBQ as a staple for every weekend the month. You can expect to see Chef Nizran and the team behind the grill every Saturday except the full moon holiday, when the BBQ Menu will be served alongside DJ Tareeq’s Vinyl performance on Sunday December 23 instead.
