Chef Ziyad’s gone ‘Shashlik’ at Alhambra, Ramada Colombo

Chef Ziyad goes Shashlik with his signature lunch specials at the Alhambra, Ramada Colombo until 31 March. Using his passion for imaginative cuisine each Moghul Shashlik consists of a grilled meat, seafood or vegetable kebab, served with biryani or pulao rice. Authentic north Indian gravy, makhani dhal, raita and an assortment of homemade Indian chutneys make fine accompaniments, whilst a serving of sticky-sweet gulab jamun sums up this most gratifying meal. Extravagant in his own tastes, only the finest spices and ingredients that meet Chef Ziyad’s approval are used in creating the robust flavours of all his dishes. Preparation of each Moghul Shashlik is an art – meats are gently marinated to bring out the finest flavours whilst vegetables are diced to perfection to ensure just the right mingling of spices. Some dishes are almost sensually slow cooked whilst others involve vigourous stirring to blend elements together for perfect essence and texture. There’s a great choice in this Moghul Shashlik menu. Select the Nawabi Murgh Shashlik, worthy of royalty itself, and sink your teeth in to succulent chunks of chicken marinated with creamy cashewnuts and brown onion, served with green peas pulao rice. The Gosht Salika Shashlik of mutton cooked in rich traditional spices is served with deliciously aromatic biryani. Seafood lovers will relish the Jhinga Shashlik of carmelised prawns served with mildly tangy lemon pulao rice.
