With Chef Eric Berrigaud moving from The Ocean on to The Grill Restaurant at The Kingsbury from 29 June to 19 July, Colombo is set to experience a festival of French Gastronomy. French cuisine can be said as the world’s most celebrated cuisine and in 2010, UNESCO rightly recognised French cuisine and added it to the list of cultural objects that are called ‘intangible cultural heritage’.
The Kingsbury’s visiting French Chef Erick Berrigaud’s journey that began as a child when helping his mother and from there went on to great lengths as he made it a point to get first-hand experience by travelling to all corners of France. The understanding he gained from the variations of produce and intricacies of each region’s culture and lifestyle he says is the foundation in his career. From there after an apprenticeship he went to showcase his skills in this sophisticated cuisine at five-star hotels, in Relais & Chateau (individually owned and operated luxury hotels and restaurants), Palaces, with Michelin star chefs, bistros as well as a personal chef.
At The Kingsbury’s Grill Restaurant, he has curated a menu working alongside the Director of Culinary and Executive Chef Kithsiri De Silva to reflect aged old traditional dishes, those that are typical of French culture and those dishes that can be considered luxurious. Some of his specialties include Prime Beef ‘Cote de Boeuf’, Dijon herb crusted Australian Lamb rack, Duck Comfit Hachis Parmentier, Nicoise salad and a mouth-watering selection of desserts. Eric’s gourmet treats are not only a treat for your taste buds, but also a visual feast of sophisticated and delicate French artistry, a spectacle to be cherished.
