New-look Park Street Mews introduces Chef Graham’s modern European cuisine

By David Ebert The newly refurbished Park Street Mews restaurant, with its new contemporary look and eclectic menu by resident UK Chef Stephen Graham, dished out an absolutely fabulous spread recently that truly lived up to its ‘Modern European’ cuisine tag. Refurbished and redesigned with greater plans to accommodate a new bar and lounge, the new look has resulted in a much cosier layout with a predominantly white colour scheme accentuated by touches of light green that gives it an almost carefree atmosphere that promises to be just the right place for a rendezvous with great company. For a more informal dining experience, the restaurant also boasts comfortable sofas as well, in addition to tables. UK Chef Stephen Graham, introducing his new menu along with the launch of the refurbished restaurant, said: “‘Modern European’ is my favoured style, where I’m looking at new ways of inventing classics.” The menu selection offers a choice of starters featuring medallions of seared tuna and tomato fondant served with a coconut, cucumber and lime salad, creamy and extremely flavourful crab croquettes with curried lemon mayonnaise and the fried camembert with fresh apple, walnuts and lemon honey dressing which had just the right subtleness to get you ready for the mains. The mains offered extremely juicy and sumptuous pork slow cooked for four hours in soy and aniseed and served with apple puree and mashed potato which contained the slightest little garnishes of fried potato sprinkles, aubergine parmigiana with spicy tomato and basil oil and lemon and herb marinated salmon served with horseradish mashed potato and roasted beetroot, that practically melts in your mouth. From the new and decadent dessert menu was a choice of soft chocolate brownie with orange ice cream, strawberry sorbet with white chocolate and yoghurt sauce and ‘trio of apple desserts’ crème brulee, sorbet and crumble. Chef Stephen stated that he finds himself fascinated by curries and looks forward to introducing fresh local produce and spices as well in the future to create imaginative food with healthier options and great presentation. He added that he believes that taste and quality also are enhanced by the exquisite presentation of the dishes to make them more visually appealing and appetising. His objective he said to make a great name for the restaurant. With experience in Michelin star kitchens and having travelled and worked extensively in Russia, France, Switzerland, London, Spain, America and the Gulf, Stephen brings in a world of experience to offer an excellent choice of dishes to the newly refurbished and re designed Park Street Mews. Stephen is a creative and modern chef with extensive experience in both private kitchens as well as in restaurants. He is experienced in preparing exquisite technically challenging food for high profile clients with high expectations, whilst remaining friendly, professional and totally flexible. His impressive experience include stints as head chef running kitchens in high-end chalets in Verbier, Gstaad and Crans Montana Haute Montagne, one of the most prestigious operators in the alps, and the Gran Hotel Son Net, Majorca. His other assignments that include private functions in Muscat, Dubai and Moscow, he states have assisted him to obtain a wealth of experience in a variety of destinations.
