Indian cuisine holds an enthralling history of heritage and culture influenced by great rulers and diverse people.

Spread across a vast geography with varying climates from the scenic mountain regions to the sun drenched coastlines, India offers a base of ingredients unlike any other country in the world. Together these components bring you one of the finest cuisines that is enjoyed the world over today.

Navratna at the Taj Samudra dedicates herself to bring authentic Indian cuisine incomparable to any other in the city of Colombo.

Chef Chauhan of Navratna himself stems from the region of Punjab in Northern India. Chauhan is passionate about the spices he uses: “Only the very best of herbs and spices can bring out the best natural flavouring in any vegetable or meat,” he remarks.

At Navratna the chefs perfectly craft cooking techniques and marination processes that are often centuries old – this is integral to the creation of authentic Indian cuisine.

Navratna’s menu offers many delectable North Indian dishes with a wide variety of soups, starters, delicious accompaniments for a main course of Indian breads or biryani and of course a selection of some fine sweets. The tradition of vegetarianism being deeply embedded in India translates into an extensive vegetarian choice too at Navratna.

Chef Chauhan recommends the murgh zor yakhini or spicy chicken soup flavoured with awadhi spice. For starters he might suggest dahi ki kebab or spiced hung yoghurt kebabs. The main course offers a choice too vast to do justice by recommending just an item or two though some all time favourites are the gosht rogan josh or tender mutton curry and the dal navaratan or black dal tempered with ginger, garlic and tomato.

The jheenga biryani or fresh prawns and basmati rice cooked with saffron and selected spices is a sure treat for the palate. Sum up your meal with malai kulfi or home style ice cream and try even the delicious gajar ka halwa or juicy shreds of carrots cooked with raisins, milk, nuts and sugar – just the perfect way to seal an exquisite dining experience.
