Vietnamese cuisine at Taj Samudra Colombo

Chef Le Nguyen Thao from the land of Dalat in Vietnam brings Vietnamese cuisine to Taj Samudra Colombo from 31 August to 8 September. Taj Samudra Colombo showcases Vietnamese cuisine in all its splendour, vibrant colours and character. Diners are invited to journey to the country of Vietnam with an eclectic dinner buffet spread.  Each preparation has a distinct flavour which reflects the many elements of Vietnamese culture.   Chef Le Nguyen Thao comes from Dalat which is famous for artichoke and fresh herbs. Fascinated by traditional cooking techniques, with an experience of over eight years Master Chef Le Nguyen Thao hails from the Blue Ginger Restaurant. Amongst his signature dishes are classic dishes such as pho, hu tieu, bun bo and mi quang. Considered as one of the healthiest cuisines worldwide the recipes include a variety of ingredients such as ginger, lemongrass, mint, coriander, saigon cinnamon, lime, basil leaves and so much more. Greatly admired for its fresh ingredients with a minimal use of oil with the reliance on herbs, vegetables makes Vietnamese cuisine a healthy choice as it also achieves a balance between fresh herbs and meats that flow as a medley to perfect taste. The menus consist of vegetarian and non-vegetarian starters and salads, a variety of soups, main courses and desserts that take you on a culinary voyage across the magic that is Vietnam. Start the voyage with one of the fresh salads such as the raw mango salad or even vegetables with lemongrass and chilli salad, move on to a spicy lemongrass soup with mushroom bamboo shoot and prawns or a thick soup with haricot and tofu or choose an option of asparagus and crab meat. Amongst some of the celebrated main course dishes created by the chef are, the stir fried scallop and asparagus with black pepper sauce, wok tossed lobster chunks and cashew nut, steamed sea bass fillet with glass noodles, oyster mushroom and scallions in a soya ginger sauce. Desserts such as the coconut caramel custard and sweetened coconut cream with jelly and fruits are a must have.
