Hilton Colombo’s world renowned Kitchen Apprentice Program achieved yet another milestone when three young outstanding kitchen apprentices took flight to Hilton Dubai Jumeirah and the Hilton Residence and Creek to continue their apprentice program to become reputed chefs. Mohamed Infaz, Sunera Janith and Rashen John were selected from the current batch of kitchen apprentices to follow a three year training program in Dubai.

The three year Kitchen Apprentice Program is intricately designed for budding culinary chefs to gain experience in creating Michelin Star cuisine while working in a world class kitchen. Hilton Colombo is the first and the only hotel in Sri Lanka currently approved to accept culinary, baking and pastry externs by the Culinary Institute of America. This reinstates Hilton Colombo’s superior training for young individuals giving these students a foundation for their growth as culinary and pastry professionals.

The Hilton Colombo remains pioneers in the hospitality industry while contributing towards the country’s tourism sector. Tourism is one of the world’s largest economic earners and training programmes such as the Kitchen Apprentice Program will contribute more towards the development and training for young individuals which will enhance the industry in the years to come.

The apprentice chefs spend their three years working in the 12 kitchens at the Hilton Colombo, mastering the art of cuisine in each of the kitchens. The program covers extensive training required to create excellent chefs. With a stringent marking scheme both testing the chef’s theoretical and practical abilities in a kitchen, these chefs receive intensive on the job training.

The chefs are then assessed quarterly and evaluated on their cooking styles and techniques from the taste to the colour of their dishes, to how they approach new cooking techniques and concepts to the way these chefs display and present their dishes.

The Apprentice Chef Program by Hilton Colombo has had a total of 150 apprentices trained completely under the wing of the Hilton team. Apprentices from previous programs have gone on to become sous chefs and executive chefs in some of the best hotels and resorts, with some apprentices also being appointed as general managers of a host of hotels both locally and globally.
