MLH brings traditional Australian “barbie” with Aussie Chefs Justin, Asanka

The Australian backyard barbeque scene has grown over the years; it has come a long way, since the male of the family stands around barking orders while drinking beer and taking pride in his ‘cooking’.

The tastes and cooking abilities have matured. Aussies perform culinary delights on their barbeque plates from roasting whole chickens to even making a stir fry. Dishes inspired by European influences are also cooked on Australian barbeques.

Australia Day is a great party day. Most Aussies would celebrate the day with a backyard BBQ followed by quite a few beers afterwards! If you have the chance to enjoy a “Barbie,” go for it; it’s a genuine cultural experience! Backyard BBQ is an event that can be enjoyed by family and friends, old and young alike.

He creates his own recipe rather than refine another chef’s recipe which has proven itself to be liked by guests the world over. His food is never complicated or pretentious. Fresh, fiery salsas spooned over charred skirt steaks, spice and citrus glazes on chicken and seafood — his dishes are direct and delicious. His affinity for bold flavours means that even meatless options shine, such as grilled vegetables enlivened with spicy vinaigrettes. A sneak peak on the menu on offer on 26 January: the raw bar, sushi bar, assorted bread display with damper breads, grilled sausages, crispy skin roast pork loin with apple relish, steak and beer pie, tempura calamari with wasabi aioli, wild fire spiced modha, bush pepper dust beef fillet steak, honey mustard lamb cutlets, meatloaf with mustard volute, sticky date pudding custard and fruit trifle, fruit pavlova roll and banana cake to name a few.
