Ropewalk, the iconic arrack-speciality bar located within the historic Galle Fort Hotel, is thrilled to announce a collaboration with Hosa, Goa. EHV International, the company behind Indian Accent, Comorin, and Koloman, launched Hosa in Siolim, Goa and the restaurant presents a unique take on South Indian cuisine. This partnership marks Hosa’s debut at an international pop-up event, and is set to mesmerise guests on 15 and 16 March, bringing together South Indian flavours with Sri Lankan hospitality.
Hosa literally means ‘New’ in Kannada and it is appropriate that its Brand Chef, Suresh DC’s roots are sown in Bengaluru. For Hosa, Chef Suresh travelled extensively across Southern India to curate dishes that are unique and has presented them in a contemporary way while retaining their authentic flavours.
At Ropewalk’s exclusive pop-up event, guests will embark on an exciting gastronomic adventure that presents a contemporary interpretation of the marvellous flavours of South India curated by Chef Suresh. Signature dishes like Almond 65, Trumpet Mushroom Varuval, Curry Leaf Cured Snapper, Mutton Pepper Roast, which promise an explosion of flavours that pay homage to South India’s vibrant culinary tapestry. Additionally, guests can relish Wild Mushroom Sukka, Mangalorean Chattambade, Shrimp Varuval, each of which offers a unique blend of spices and textures. For dessert, the refreshing flavours of coconut and jasmine beautifully conclude the culinary journey with elegance.
Amrit Rajaratnam, the visionary founder of Ropewalk and Managing Director of Maitland and Knox Heritage Hotels, expresses his anticipation for this groundbreaking collaboration, stating, “We’ve been following the amazing trajectory of Hosa and the outstanding work they have been doing in India. Complementing the array of dishes on the menu, EHV International Head of Bars Varun Sharma presents an exciting cocktail menu that is in harmony with Hosa’s food offering. Gun Fizz Powder, Jungle Babbler, Fennel Paloma and Crystal Punch are some of the cocktails that will be a part of the pop-up’s special menu. In addition, guests are invited to immerse themselves in the art of mixology during a masterclass led by Varun Sharma on 16 March, where attendees will uncover the secrets behind crafting the perfect cocktail using local Sri Lankan spirits and local Indian ingredients.
